Is there an option of purchasing just one of these mobility sticks?

What is the best option to get if you are 5'10?

The 6ft + 6ft + 4ft stick bundle will work best for you if you are 5' 10" unless you have particularly long arms for your height. In that case, the 7ft + 7ft+ 5ft stick bundle might be a better fit. A good way to gauge this is to measure your wing span with your arms spread perpendicular to your body from fingertip to fingertip. If it measures longer than 5'10", go with the 7ft stick bundle.

What are these made out of? seems like i could just go to a home improvement store and fashion my own out of pvc....am i wrong?

They are fiberglass I think, Pvc would crack or stay flexed. The closest thing I've seen is the limb saws that extend. Remove the saw and you might have a usable 2 piece. My advice is spring for the actual thing-expensive-yes but safe, useful and will never wear out.
