Q: Is it supposed to taste bitter?

My understanding is that it does. However, I have been making muffins with this buckwheat and do not taste any bitterness. The recipe I use does not use cane sugar but, instead, ripe bananas and a small amount of maple syrup.

Q: Is it third party tested for heavy metals?

Yes we test for heavy metals and we are well below the Parts Per Million allowed by the FDA.

Q: What is the difference between this a regular buckwheat flour?

The nutritional values are much higher. The polyphenols are 50 to 100 times greater. It is also certified organic which not all buckwheat is.

Q: Trans fats are unsafe at any level. Why are they used in this product?
