Yes, it is a seedless puree, as is the Blackberry...they make great syrups for pancakes, waffles, French toast and a little goes a long way

Does this need refrigeration once opened?

Per the bottle, it states "FOR OPTIMAL FRESHNESS, REFRIGERATE AFTER OPENING" ... which means it doesn't have to be... like most sugar-based products, these will not go bad when they aren't refrigerated.

If mixed with chocolate ganache, will it make the ganache too runny for truffles?

It’s like a shampoo consistency. Slightly more runny than jam or jelly. Thicker than grenadine for sure. Thicker than the monin syrups. Same consistency as the real coconut mix. I think it would work
