Why wouldn’t I choose the 5000g model even if I’m only weighing smaller amounts? Are there disadvantages (e.g. accuracy at the low end, speed, etc.)?

Yes, let's take an example to explain this.
If we use 200g, 500g, 1000g, 5000g lab scales single point calibrated to weigh 50g items, the 200g one will be the best both at the weighing speed and accuracy. 
Multiple points calibration can resolve the accuracy problem. That is to say, if we multiple points calibrate this 4 scales, their accuracy about weighing a 50g or 10g or 100g weight will be close. But the speed problem can't be resolved.
Besides, most of our customers don't have calibration weight set. The calibration weight included for our 500g-3000g scales are only for single point calibration. So we recommend to choose the capacity according to your need. Not the larger the better.

Will the scale automatically shut off?   I want a scale with manual on-off controls(it stays on until switched off)

If I use a 289 gram container on a 500 gram scale, will it be able to detect powdered supplements of just .5 grams?

Yes, it can detect 0.5 grams. Please check the attached video.
But make sure you can accept the tolerance, ±0.03g of this scale.

We'd recommend you to calibrate the scale by multiple points, which will make the scale more accurate.
The weights required of multiple points calibration for 500g scale are 200g and 500g. 500g weight is included in the package and you need to get a 200g weight separately.

Tips for weighing powder:do NOT leave the container on the scale for a long time. For example, if you want to weigh several powders, remove everything on the scale once finish weighing for one time.
If the scale has loading for some time, the sensor would start to disform and reading would creep.

Besides, since the container is quite heavy, please pay attention to the max weighing. Once it is tared, the maximum weight of powder you can add is 500g-289g=211g.
Always take the container weight into count.
