I've had this knife for a six months now, and I have to say that it is the best knife that I have owned. I'm a fine furniture maker and have a lot of experience with different tempered steels and their characteristics of edge retention and such, and this knife stands up there with the best tools that sit above my workbench. My biggest worry was the fact that the handle looked so geometric, but is fits so nicely in the hand.I'm writing this review because I am sharpening the knife for only the second time. The steel that this knife is made of is able to be sharpened at a shallow angle and retain it's edge for months. I have not had any issues with oxidation on the blade. The way that the handle wanes into the blade fits my finger just right.I can't really say enough good things about this knife. The only thing that I wasn't too fond of at first was the sound that the knife makes. As a metal handled knife, any bum makes the whole knife ring out like a chime. After a couple weeks of use that sound now rings as "Excalibur" in my ears.All of my previous chef knives were 8" blades, and I wondered how much of a difference the extra half inch would make, but I don't notice it. The sweep of the Kiritsuke means that slicing and chopping motions are as smooth as the motion of the ocean, but I can also choke up on the blade and pare with ease. I would buy the full lineup of these from Dalstrong, but honestly don't see a need, this knife can do it all with ease and enjoyment of use.I wish I got as much enjoyment out of everything I bought online as I get with this knife.rant over, mic drop.

My Favorite Knife, Ever
This is my favorite knife, ever.I've owned very expensive knives in the past...I prefer the Dalstrong Chef knife over them all.It comes with an excellent wooden sheath that has magnetic backing. The magnet will hold the knife in the sheath and/or mount on a magnetic knife rack.The knife holds an excellent edge. I always do a quick sharpening with a ceramic sharpener (I use the Victorinox 4.3323 Pocket Knife Sharpener), and it keeps nearly a sushi-chef edge.Ergonomically, the balance is excellent. This is the do-anything knife: slice, cut, pare, carve, even a reasonable fillet ability. The blade has an excellent spine thickness, and very nice taper down to the edge and point. It will not bend.I like the contiguous steel handle and styling. This is a GOOD LOOKING knife - no seams or handles to crack or discolor. The stainless steel cleans very nicely. I get compliments from guests about the styling.I've bought one for each of my kids as a gift. It's quality, very useful, and still won't break your bank.

Great Knife for the Cost
The knife came quickly. I really like the magnetic sheath that comes with it. The knife is lightweight and cuts well. Factory sharpness is pretty good. My only complaint, which I expected, is the handle is a little awkward to work with. My wife isn't a huge fan, so I expect I will be the primary user of the knife. At the price point, however, the knife is a great deal! 4.5 stars would be my ideal review.

Stellar blade quality
The knife itself is immaculate, been almost a month since I’ve bought it, use it daily in commercial kitchens and haven’t had to sharpen it once it still cute through paper with only the weight of the blade but the magnet in the sheath fell out in like a week. Easy fix with some super glue but something to mention.Also for use in kitchens the handle gets very slippery easily but the gap in the handle makes it able to use still, even if slightly uncomfortable
