How thick are the slices? Saw one answer stating 1/16”, but that can’t be right according the pictures.

The distance between the wires is approx 5/16". Practical application....I get 9 slices out of a can of Spam. Hope that helps.

Can this item cut mushrooms? (Think the regular white grocery store mushrooms)

I think it might. If I'm thinking of the same small mushrooms that I believe your talking about. The "wires" are thin and should, if pressed easy should be able to cut the mushrooms. I use it mostly for eggs or Spam, and it does a good job on them. giving smooth cuts.

What is the minimum and maximum thickness you can slice?

For max, I think a can of Spam laying on it's side is the max practical thickness. You might be able to slice it standing up, but why? Don't make things harder than it needs to be. Thickness is not the only dimension, to be concerned about. The wire frame moves in an arc, so if the object you want to slice is too wide, the frame can't clear it. As for minimum, well once you slice it, you can then slice a single slice, which is about 1/4 inch thick. You can probably do thinner, but I have not tried.
