The knife worked well
Only use the knife one time, but the results were very good. The knife did a good job cutting the meat.

Professional grade German steel

It's decent but soft steel
Came super sharp. 4116 steel so it doesn't last a long time and needs tuned up. Handle is cool and I like the blade profile. Good value for the money.

These knives are amazing, extremely sharp, well balanced and easy to put an edge on. One review stated they didn't stay sharp after a lot of use. Obviously they don't own a honing rod or whetstones. About ever other time I use it I hit it on the honing rod a few times and will most likely use the whetstone at least twice a year. Slice thru tomatoes with ease and trimming up a roast was no problem. My wife bought me 4 of this brand knife and a new honing rod by them for Christmas and when it's time to add some different blades to my collection they will definitely be Cutluxe Artisan Series.

Very pleased with the control
The shape of the knife is (imho) key to this working better than a regular boning knife. This knife is well balanced, easy to hold, easy to maneuver around bones, cuts cleanly, keeps its edge. The last part is the most important - it holds the edge after doing a lot of deboning and cutting. I do run the knife over a sharpening steel before I use it each time, but it doesn't need a good honing as the steel keeps it perfect. The weight and balance are also key to handling a knife safely, this one is balanced perfectly and is a bit heftier than I was expecting. A worthy investment in cutting and deboning - especially if you like to cook a lot.
